This 3-Ingredient Holiday Ranch Potato Casserole is a creamy, herby, and ultra-comforting side dish that’s perfect for holidays, potlucks, or weeknight dinners. With frozen hash browns, sour cream, and ranch seasoning, it comes together effortlessly and tastes like pure comfort in every bite.
Ingredients
- 1 (32-ounce) bag frozen diced hash brown potatoes, thawed
- 1 (16-ounce) container sour cream
- 1 (1-ounce) packet ranch seasoning mix (such as Hidden Valley)
Instructions
- Preheat the Oven: Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with nonstick spray or butter.
- Mix the Sauce: In a large bowl, combine sour cream and ranch seasoning. Stir until smooth and evenly blended.
- Combine the Potatoes: Add thawed hash browns and fold gently until all potatoes are coated in the creamy ranch mixture.
- Bake: Spread the mixture evenly in the prepared baking dish. Bake uncovered for 40–50 minutes, until bubbly around the edges and golden on top.
- Rest and Serve: Let the casserole rest for 5–10 minutes before serving. Garnish with chives or parsley, if desired.
Notes
For a cheesy version, stir in 1–2 cups of shredded cheddar or Colby Jack cheese before baking. To add crunch, top with crushed crackers or breadcrumbs during the last 10 minutes of baking. For a lighter version, replace half the sour cream with plain Greek yogurt.
