  • 1 (8.5-oz) corn muffin mix
  • 1 (14.75-oz) can creamed corn
  • 2 large eggs
  • ½ cup milk
  • lb ground beef
  • 1¾ cup barbecue sauce
  • 2 tbsp mustard
  • 1 tbsp Worcestershire sauce
  • 2 tsp chili powder
  • 1 tsp garlic powder
  • 2 tsp onion powder
  • Salt and pepper to taste
  • 1½ cups shredded cheddar cheese
  • Fresh parsley or green onions for garnish (optional)

Instructions

  1. Preheat the Oven: Heat oven to 400ºF. Grease a 9×13-inch baking dish with nonstick spray.
  2. Make the Cornbread Base: In a large bowl, combine corn muffin mix, creamed corn, eggs, and milk. Stir until smooth. Spread into prepared baking dish and bake for 20 minutes.
  3. Cook the BBQ Beef: In a large skillet over medium-high heat, brown the ground beef until no longer pink. Drain excess fat. Stir in barbecue sauce, mustard, Worcestershire, chili powder, garlic powder, onion powder, salt, and pepper. Simmer for 5 minutes until thickened.
  4. Assemble the Casserole: Remove cornbread from the oven. Spoon beef mixture evenly over the top. Sprinkle with shredded cheddar cheese.
  5. Bake and Serve: Return to oven for 20 minutes, until cheese is melted and bubbly. Rest for 5 minutes, garnish with parsley, then slice and serve warm.

Notes

For a heartier version, add a can of drained black beans to the beef mixture. To make ahead, assemble the casserole and refrigerate overnight before baking. This dish also freezes well for up to 2 months.
