  • 1/2 red bell pepper, diced

Instructions

  1. Preheat and Prep the Pan: Preheat oven to 350°F (175°C). Spray a 9×13-inch baking pan with cooking spray and set aside.
  2. Mix the Egg Base: Combine eggs, sour cream, milk, shredded cheddar cheese, salt, and pepper in a large bowl. Mix on low speed with electric mixers just until combined; do not overmix.
  3. Cook the Beef Sausage: Heat a large skillet over medium heat. Add beef sausage and cook until browned, breaking it into small crumbles with a wooden spoon. Drain most of the grease, then add sausage to the egg mixture bowl.
  4. Sauté the Vegetables: In the same skillet, sauté the diced bell peppers and green onions for 2 to 3 minutes until just softened. Add to the bowl with the eggs and sausage.
  5. Combine and Pour: Stir everything together until evenly distributed. Pour the mixture into the prepared 9×13-inch pan.
  6. Bake: Bake for 35 to 50 minutes, or until the edges are fully set and the center has only the slightest jiggle when you gently shake the pan.

Notes
