Description

This Cheesy Chicken Broccoli Rice Casserole is a creamy, hearty one-dish dinner that combines golden-seared chicken, tender broccoli florets, and perfectly cooked long-grain rice in a rich cheddar-cream sauce, all topped with a buttery Ritz cracker crust. Ready in about an hour and easy to make ahead, it is the weeknight comfort meal your family will ask for again and again.

  • 2 boneless skinless chicken breasts, or 2 cups diced rotisserie chicken
  • Salt and pepper, to taste
  • 1 teaspoon Italian seasoning
  • 2½ cups chicken broth
  • 1 tablespoon olive oil
  • 1¼ cups white long-grain rice, uncooked
  • 23 cups fresh broccoli florets, uncooked
  • 10.5 oz cream of chicken soup, condensed
  • ½ cup milk
  • ½ cup sour cream
  • 2 cups shredded cheddar cheese, separated
  • ½ teaspoon dried thyme (optional)
  • ½ teaspoon garlic powder (optional)
  • 1 cup Ritz crackers, crushed
  • 2 tablespoons melted butter

Instructions

  1. Preheat and Prep: Preheat your oven to 350°F. Cut chicken into bite-sized pieces and season with salt, pepper, and Italian seasoning.
  2. Sear the Chicken: Melt butter in a large pot over medium heat. Add the seasoned chicken and cook until golden brown, about 5 minutes. Remove and set aside.
  3. Cook the Rice Base: Add chicken broth, olive oil, and uncooked rice to the same pot. Bring to a boil, then reduce heat to a simmer. Cover tightly and cook for 6 minutes.
  4. Add the Broccoli: Scatter the broccoli florets over the rice, replace the cover, and cook for 9 more minutes until no liquid remains and the rice is cooked through. If the rice is not fully tender, cover and simmer for 5 more minutes.
  5. Rest the Rice: Remove from heat, keep covered, and let stand for 10 minutes without stirring.
  6. Build the Casserole Filling: Stir in the cooked chicken, cream of chicken soup, milk, sour cream, optional thyme and garlic powder, and half of the shredded cheddar cheese until combined.
  7. Transfer and Top: Spread the mixture into a lightly greased 9×13-inch casserole dish and top with the remaining cheddar cheese. Cover and bake for 15 minutes.
  8. Add the Cracker Crust: Mix crushed Ritz crackers with melted butter and sprinkle evenly over the casserole. Bake uncovered for 10 more minutes until golden and bubbling. Serve immediately.

Notes

Use rotisserie chicken to cut active prep time in half. Do not stir the rice while it rests – this step releases any stuck grains from the bottom of the pot. For extra depth of flavor, add a pinch of garlic powder and dried thyme to the filling. Leftovers keep well refrigerated for up to 4 days and reheat beautifully with a splash of broth.
