- 1 1/2 tablespoons olive oil, divided
- 1 1/2 tablespoons taco seasoning (or steak seasoning)
- 1 medium onion, thinly sliced
- 1 red bell pepper, sliced
- 1 orange bell pepper, sliced
- 4 cloves garlic, minced
- 1/4 cup low-sodium chicken broth
- 2/3 cup shredded provolone or mozzarella cheese
Instructions
- Season the Chicken: Toss sliced chicken with 1 tablespoon olive oil and seasoning in a bowl until well coated.
- Sear the Chicken: Heat 1/2 tablespoon olive oil in a large skillet over medium heat. Add the chicken in a single layer and cook for 5 minutes, stirring occasionally to get a golden sear.
- Add the Veggies: Stir in the sliced onions and bell peppers. Cook for 5–6 minutes until softened and lightly browned.
- Deglaze and Flavor: Add garlic and stir for 30 seconds. Pour in the broth to deglaze the skillet and capture all the flavor from the pan.
- Finish with Cheese: Sprinkle cheese over the top. Cover the skillet and cook on low for 2–3 minutes until cheese is melted and gooey.
- Serve: Enjoy hot over rice, in toasted hoagie rolls, or low-carb in lettuce wraps or bowls.
Notes
