This Chicken Pot Pie Casserole is the ultimate comfort food made with tender chicken, hearty vegetables, and a rich creamy filling baked between two golden crescent roll crusts. It delivers all the cozy flavors of a classic pot pie without the fuss of making pastry from scratch.

  • 2 (8-ounce tubes) Refrigerated Crescent Rolls
  • 1 Tablespoon Olive Oil (or canola, avocado, etc.)
  • 1 small Onion, diced
  • 1 pound Boneless/Skinless Chicken Breasts, cooked and cut into bite-sized pieces
  • 12 ounces Frozen Peas and Carrots, thawed
  • 2 cups Frozen Diced Potatoes, thawed (Potatoes O’Brien recommended)
  • 1 cup Chicken Broth
  • 3/4 teaspoon Poultry Seasoning
  • 2 teaspoons Garlic Powder
  • 1 teaspoon Onion Powder
  • 1/2 teaspoon Black Pepper
  • 2 (10.75 ounce cans) Cream of Chicken Soup
  • 1 Tablespoon Whole Milk

Instructions

  1. Preheat and Prep the Dish: Preheat oven to 350 degrees F. Lightly spray a 13×9-inch baking dish with cooking spray. Gather and measure all ingredients before starting.
  2. Lay the Bottom Crust: Open one tube of crescent rolls and press the whole sheet into the bottom of the baking dish. Pinch together the seams and press the dough slightly up the sides.
  3. Pre-Bake the Crust: Bake the bottom crust for 15 to 20 minutes until golden. Remove from oven and set aside.
  4. Saute the Onion: Heat a large skillet with high sides over medium-high heat. Add olive oil, then add diced onion and cook for 5 minutes until translucent and softened.
  5. Build the Filling: Lower heat to medium. Add cooked chicken, peas and carrots, potatoes, chicken broth, poultry seasoning, garlic powder, onion powder, and black pepper. Stir to combine.
  6. Cook the Filling: Cover and cook for 5 to 8 minutes, stirring once, until warmed through. Remove from heat and stir in the two cans of cream of chicken soup.
  7. Assemble the Casserole: Spread the filling evenly over the pre-baked crust in the baking dish.
  8. Add the Top Crust: Open the second tube of crescent rolls and gently stretch to cover the filling. Pinch seams together and press dough against the sides. Cut 4 small slits with a knife and brush with milk.
  9. Bake Until Golden: Bake uncovered for 20 to 30 minutes until the top crust is deep golden brown and fully cooked. Serve immediately.

Notes

Pre-baking the bottom crust is the key step that prevents a soggy base. Use rotisserie chicken to save time on a weeknight. Thaw frozen vegetables fully before adding them to the pan so the filling does not become watery. Cut slits in the top crust to allow steam to release, which keeps the pastry crisp and flaky.
