Description
This Chicken Stuffing Casserole layers tender shredded rotisserie chicken, a creamy mushroom and chicken soup filling, sautéed onion and celery, and a golden Stove Top stuffing crust baked to perfection in one dish. It is the kind of cozy, crowd-pleasing dinner that feels like a Sunday roast without the Sunday effort.
Ingredients
- Cooking spray
- 1½ cups water
- ¼ cup butter
- 1 (6 oz) package quick-cooking stuffing mix (such as Stove Top)
- 1 tablespoon butter
- 1 medium onion, diced
- 3 stalks celery, diced
- 1 (10.5 oz) can low-sodium cream of chicken soup
- ½ (10.5 oz) can low-sodium cream of mushroom soup
- 1 (8 oz) container sour cream
- 1 whole cooked rotisserie chicken, skinned, boned, and meat shredded
- Salt and ground black pepper to taste
Instructions
- Preheat and Prep the Dish: Preheat oven to 375°F (190°C). Coat a 9×13-inch baking dish with cooking spray.
- Make the Stuffing Topping: Bring water and ¼ cup butter to a boil in a saucepan. Add stuffing mix, stir, cover, and remove from heat. Let sit 5 minutes, then fluff with a fork.
- Soften the Vegetables: Melt 1 tablespoon butter in a skillet over medium heat. Add diced onion and celery and cook, stirring, until softened, 5 to 10 minutes.
- Mix the Creamy Sauce: Stir both condensed soups together with the sour cream in a bowl until smooth and well combined.
- Layer the Casserole: Spread shredded chicken across the bottom of the prepared baking dish. Top with the cooked onion and celery mixture and season with salt and pepper.
- Add the Sauce and Stuffing: Spoon the creamy soup mixture evenly over the vegetables, then spread the prepared stuffing across the top.
- Bake Until Golden: Bake uncovered for about 1 hour, until the filling bubbles around the edges and the stuffing top turns deep golden brown.
- Rest and Serve: Let the casserole rest for 5 minutes before serving to allow the layers to settle.
Notes
Rotisserie chicken is the biggest time-saver here, grab one from the grocery store deli section and it shreds in minutes. If the stuffing top browns too fast, loosely tent with foil for the last 15 minutes. Leftovers reheat beautifully in the oven at 350°F for 20 minutes.
