Description

These Cottage Cheese Egg Bites are soft, high-protein breakfast muffins that are baked to perfection in under 30 minutes. Packed with cottage cheese, eggs, and customizable add-ins, they’re ideal for meal prep, low-carb lifestyles, or a quick grab-and-go breakfast.


Ingredients

  • 1 cup full-fat cottage cheese
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup shredded cheese (cheddar, Colby Jack, or mozzarella)
  • 1/21 cup optional add-ins (e.g. chopped spinach, mushrooms)

Instructions

  1. Preheat and Prep: Preheat oven to 325°F. Grease a non-stick muffin tin or line with silicone muffin cups.
  2. Blend the Base: In a blender, combine eggs, cottage cheese, salt, and pepper. Blend for 30–60 seconds on medium speed until smooth.
  3. Assemble: Place your add-ins and shredded cheese in each muffin cup. Pour the egg mixture over the top, filling each cup about ¾ full.
  4. Bake: Bake for 22–25 minutes, or until the egg bites are set and lightly golden. Let cool in the pan for 5 minutes before removing.
  5. Serve or Store: Serve warm or let cool completely for storage. Keep in the fridge for 3 days or freeze for up to 3 months.

Notes

Use 9 eggs if using 1/2 cup of mix-ins, or 8 eggs for 1 full cup of mix-ins. Avoid overbaking to keep the texture soft. Add foil during baking if the tops brown too fast. To reheat, microwave for 30 seconds or air fry at 350°F for 5 minutes.
