Ingredients
- 1 1/2 pounds boneless skinless chicken breasts
- 1 tablespoon olive oil or avocado oil
- 1/2 teaspoon smoked or sweet paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried rosemary
- Salt and pepper, to taste
- 1 cup almond milk
- 1 tablespoon gluten-free flour
- 1 yellow onion, diced
- 3 garlic cloves, minced
- 3/4 cup low sodium chicken broth
- 10 ounces baby spinach, roughly chopped
- 1/2 cup finely grated parmesan cheese
- 2 tablespoons fresh parsley, chopped
Instructions
- Season the Chicken: Mix paprika, garlic powder, basil, rosemary, salt, and pepper. Rub seasoning over chicken breasts.
- Sear the Chicken: Heat olive oil in a skillet over medium heat. Sear chicken for 6–7 minutes per side until golden. Remove and set aside.
- Build the Sauce Base: Whisk almond milk and flour. In the same skillet, sauté onion for 3–4 minutes, then add garlic for 1 minute more.
- Simmer the Sauce: Pour in chicken broth, scraping the pan. Stir in the almond milk mixture. Let it simmer for 3–5 minutes until thickened.
- Add Spinach and Cheese: Stir in spinach and cook until wilted. Add parmesan and mix until melted.
- Combine and Finish: Return chicken to skillet. Simmer for 8–10 minutes or until fully cooked. Garnish with parsley and serve.
Notes
Use boneless chicken thighs for a juicier variation. For dairy-free, substitute parmesan with nutritional yeast and almond milk with lite coconut milk. Always wilt spinach just briefly to preserve color and texture.
