Ingredients
- 2 tablespoons olive oil
- 3 large yellow onions, thinly sliced
- 1 pound chicken breast, cut into bite-sized pieces
- Kosher salt and pepper, to taste
- 1 large head cauliflower, cut into florets
- 30 ounces cream of chicken soup (2 x 15 oz cans)
- 1 cup shredded cheddar or gouda cheese
- 1/2 cup French fried onions (optional topping)
- 1/4 cup sour cream French onion dip (optional for richness)
Instructions
- Preheat Oven: Preheat your oven to 350°F and lightly grease a 9×13-inch casserole dish.
- Caramelize the Onions: Heat olive oil in a large skillet over medium heat. Add sliced onions and cook for 12–15 minutes, stirring often, until soft and golden brown.
- Add the Chicken: Add diced chicken breast to the skillet with onions, season with salt and pepper, and cook until the chicken is half-cooked, about 6–8 minutes.
- Prepare the Base: Spread cauliflower florets evenly in the casserole dish. Sprinkle with salt and pepper.
- Assemble the Casserole: Spoon the chicken and onion mixture over the cauliflower, then pour cream of chicken soup on top.
- Bake: Cover the casserole with foil and bake for 30–35 minutes until the cauliflower is tender.
- Add Cheese: Remove the foil, sprinkle shredded cheese evenly over the top, and bake uncovered for an additional 15 minutes until golden and bubbly.
- Rest and Serve: Let the casserole rest for 10 minutes before serving. Top with French fried onions if desired.
Notes
Make ahead by assembling the casserole one day in advance and refrigerating until ready to bake. To freeze, wrap tightly and store for up to 3 months. Reheat covered at 350°F until warmed through. Add a tablespoon of milk or broth if the sauce thickens too much when reheating. For added flavor, mix cheddar and gruyere cheese for the topping.
