  • 1 tablespoon Italian seasoning
  • ½ tablespoon garlic powder
  • ½ cup all-purpose flour
  • ¼ cup Parmesan cheese, shredded
  • 3 tablespoons olive oil
  • 1 tablespoon butter
  • 2 tablespoons unsalted butter (for sauce)
  • 1 tablespoon olive oil (for sauce)
  • 3 yellow onions, sliced thin
  • 1 tablespoon low sodium soy sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • ¼ teaspoon ground sage
  • 3 cloves garlic, minced
  • 2 tablespoons flour
  • 1 cup chicken broth
  • 1 cup beef broth
  • 1 beef bouillon cube
  • 2 cups shredded Gruyère or Swiss cheese
  • Fresh thyme, for garnish

Instructions

  1. Prepare the Chicken: Cut chicken into thinner slices and pound to ¼-inch thickness. Season both sides with salt, pepper, garlic powder, and Italian seasoning. Dredge in a flour and Parmesan cheese mixture.
  2. Sear the Chicken: Heat olive oil and butter in a large skillet over medium-high heat. Add chicken and sear each side for 3–4 minutes until golden brown. Remove and set aside.
  3. Caramelize the Onions: In the same skillet, melt butter and add olive oil. Stir in sliced onions and cook over medium-low heat for 30–40 minutes, stirring occasionally, until deep golden brown. Add soy sauce, thyme, and rosemary halfway through cooking.
  4. Build the Sauce: Stir in garlic and cook for 1 minute. Add flour and stir for another minute to remove raw taste. Pour in chicken and beef broths and add the bouillon cube. Stir until sauce thickens and reduces slightly.
  5. Combine and Bake: Return seared chicken to the skillet, spoon sauce over each piece, and top with shredded cheese. Transfer skillet to the oven and bake at 475°F (245°C) for 15–20 minutes, until cheese is melted and bubbly.
  6. Serve: Remove from oven and garnish with fresh thyme. Serve hot with mashed potatoes, green beans, or crusty bread.

Notes

For best results, caramelize onions slowly over low heat. Use both beef and chicken broth for maximum depth of flavor. Gruyère, Swiss, or mozzarella cheese all work well. To control salt, use low-sodium broth and soy sauce. Leftovers can be refrigerated for up to 3 days or frozen for up to 3 months.
