- 8 rice paper wrappers
- 1 cup fresh kimchi, drained and roughly chopped
- 1 cup lettuce leaves, shredded
- 1 medium carrot, julienned
- 1 small cucumber, julienned
- 1/2 bell pepper, thinly sliced
- 1/4 cup fresh mint leaves
- 1/4 cup fresh cilantro leaves
- 1/4 cup fresh basil leaves (optional)
- 1/2 cup cooked tofu, shrimp, or grilled chicken (optional)
- Sesame seeds for garnish (optional)
Instructions
- Prepare the Filling: Drain excess liquid from the kimchi and chop it into bite-sized pieces. Wash and prepare all vegetables and herbs.
- Soften the Rice Paper: Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for 10–15 seconds until soft but still slightly firm.
- Assemble the Rolls: Lay the softened wrapper on a clean surface. Arrange lettuce, carrot, cucumber, bell pepper, herbs, kimchi, and optional protein in the center.
- Roll Tightly: Fold the bottom of the wrapper over the filling, fold in both sides, then roll tightly until sealed.
- Repeat: Continue with the remaining rice paper wrappers and filling ingredients.
- Serve: Arrange the spring rolls on a serving platter and enjoy immediately with peanut sauce, gochujang dipping sauce, or a simple soy-vinegar dip.
Notes
Avoid over-soaking the rice paper, as it continues to soften after dipping. Drain the kimchi well to prevent soggy rolls. Cover finished rolls with a damp towel until serving to keep them fresh. These rolls are best enjoyed immediately after assembly.
