  • 3 tablespoons flour (all-purpose or substitute almond/oat flour)
  • 2 tablespoons olive oil or butter, divided
  • 3–4 garlic cloves, minced
  • 3 fresh lemons, juiced (plus wedges for serving)
  • ¼ cup chicken broth (or vegetable broth)
  • 2 tablespoons fresh dill or parsley, chopped
  • 2 green onions, sliced

Instructions

  1. Prepare the Chicken: If using chicken breasts, slice in half lengthwise or pound thin. Season with Italian seasoning, salt, and pepper. Lightly dredge in flour to coat.
  2. Sear the Chicken: Heat 1 tablespoon olive oil in a large skillet over medium heat. Cook chicken 3–5 minutes per side until golden and 165°F inside. Transfer to a plate.
  3. Make the Sauce: In the same skillet, add remaining oil and garlic. Cook 30 seconds until fragrant. Add lemon juice and chicken broth, scraping brown bits from the pan.
  4. Combine and Simmer: Stir in fresh dill. Return chicken to skillet and coat with sauce. Simmer 1–2 minutes on low.
  5. Serve: Garnish with green onions and lemon wedges. Enjoy with rice, pasta, or veggies.

Notes

For best flavor, always use fresh lemon juice instead of bottled. To keep chicken juicy, don’t overcook – remove from heat as soon as it reaches 165°F. For a sweet variation, whisk in 1 tablespoon of honey to the sauce before simmering.
