  • 1 pound raw ground beef (80–90% lean)
  • 1 teaspoon kosher salt, divided
  • 1/2 teaspoon black pepper, divided
  • 2 cups ricotta cheese (whole milk or part-skim)
  • 1 large egg
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 2 cups marinara or pasta sauce
  • 810 no-boil lasagna noodles
  • 1 1/2 cups shredded mozzarella cheese

Instructions

  1. Preheat and Prep: Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch glass baking dish with olive oil.
  2. Season the Beef: In a bowl, gently mix ground beef with half of the salt and pepper, breaking it into loose crumbles.
  3. Make the Ricotta Mixture: In a separate bowl, combine ricotta cheese, egg, Parmesan, parsley, remaining salt, and remaining pepper until smooth.
  4. Build the First Layer: Spread a thin layer of marinara sauce in the bottom of the dish. Add a layer of no-boil noodles.
  5. Add Beef and Ricotta: Crumble half of the raw beef evenly over the noodles. Spread half of the ricotta mixture on top, followed by sauce and a sprinkle of mozzarella.
  6. Repeat Layers: Add another layer of noodles, remaining beef, remaining ricotta mixture, more sauce, and mozzarella.
  7. Finish and Bake: Top with final noodles, remaining sauce, and mozzarella. Cover tightly with foil and bake for 40 minutes. Uncover and bake an additional 15–20 minutes until bubbly and golden.
  8. Rest and Serve: Let rest for 10–15 minutes before slicing. Garnish with extra parsley if desired.
