Description

This Oven-Baked Macaroni and Cheese with Silky Cheddar-Gruyère Sauce Recipe is the ultimate creamy comfort dish. Tender elbow macaroni gets coated in a rich, homemade cheese sauce made with sharp cheddar and nutty Gruyère, then baked until perfectly bubbly and golden. It’s a cozy, from-scratch classic that works beautifully for weeknight dinners, holidays, or family gatherings.

Ingredients

Scale
  • 8 ounces (about 2 cups) dry elbow macaroni
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 2 cups milk (whole or 2% works best)
  • 1 teaspoon mustard powder
  • 1/2 teaspoon salt, plus more for pasta water
  • 1/4 teaspoon black pepper (optional)
  • 2 cups shredded sharp cheddar cheese (about 8 ounces)
  • 1 cup shredded Gruyère cheese (about 4 ounces)
  • Nonstick spray or extra butter for greasing the baking dish

Instructions

  1. Preheat and Prepare: Preheat oven to 350°F (175°C). Lightly grease a 2-quart baking dish with nonstick spray or butter.
  2. Cook the Pasta: Bring a large pot of salted water to a boil. Add elbow macaroni and cook until just al dente according to package directions. Drain well and transfer to the prepared baking dish.
  3. Make the Roux: In a medium saucepan over medium heat, melt butter. Whisk in flour and cook for 1–2 minutes until smooth and lightly bubbly.
  4. Add the Milk: Slowly pour in milk while whisking constantly. Continue whisking and cooking until the sauce thickens and coats the back of a spoon, about 4–6 minutes.
  5. Add Seasoning and Cheese: Stir in mustard powder, salt, and black pepper. Reduce heat to low and add shredded cheddar and Gruyère a handful at a time, stirring until fully melted and silky.
  6. Combine and Bake: Pour the warm cheese sauce evenly over the macaroni. Gently stir to coat all pasta. Bake for 20–25 minutes until heated through and lightly golden on top.
  7. Rest and Serve: Let the dish rest for 5–10 minutes before serving to allow the sauce to thicken slightly.

Notes

For a crunchy topping, mix 1/2 cup breadcrumbs with 1 tablespoon melted butter and sprinkle over the pasta before baking. For extra protein, stir in cooked diced chicken or ground turkey before baking. Always shred cheese fresh for the smoothest sauce.
