Description

Potato puffs are classic oven-baked bites made from mashed potatoes, eggs, and flour, crispy and golden outside, pillowy soft inside, ready in just 35 minutes with three simple pantry ingredients.


Ingredients

  • 3 cups cold mashed potatoes (plain or lightly seasoned; Yukon gold potatoes recommended)
  • 2 large eggs
  • 1/3 cup all-purpose flour (plus 1–2 tbsp extra if batter is too loose)
  • Optional: pinch of cayenne pepper, black pepper, sour cream, or shredded Monterey Jack cheese for loaded variation

Instructions

  1. Preheat and Prep Pan: Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it.
  2. Break Up the Mash: Add cold mashed potatoes to a large mixing bowl and loosen them with a spoon.
  3. Mix in Eggs: Crack both eggs into the bowl and stir until fully incorporated and the mixture looks smooth.
  4. Add Flour: Sprinkle flour over the potato mixture and stir until a thick, scoopable batter forms. Add extra flour one tablespoon at a time if needed.
  5. Scoop and Shape: Drop rounded mounds onto the baking sheet about 1 inch apart, piling each mound upward for a taller puff.
  6. Bake: Bake on the middle rack 20–25 minutes until golden brown and set with crispy edges.
  7. Optional Broil: Broil 1–2 minutes for extra crispness, watching closely.
  8. Rest and Serve: Cool on the pan 3–5 minutes, then transfer to a platter and serve warm.

Notes

Always start with cold mashed potatoes, warm mash makes the batter too loose. Pile each mound tall on the sheet for the best puff shape. For cheesy mashed potato puffs, fold in 1/2 cup shredded Monterey Jack cheese before scooping. Batter can be prepped up to 4 hours ahead and refrigerated covered.
