Made with egg noodles, tuna, mushroom soup, and cheese, it’s the ultimate comfort food that comes together in under 40 minutes. Perfect for busy weeknights or a nostalgic family dinner.
Ingredients
- 1 (12-ounce) package egg noodles
- 2 (10.5-ounce) cans condensed cream of mushroom soup
- 2 cups shredded Cheddar cheese, divided
- 2 (5-ounce) cans tuna, drained
- 1 cup frozen green peas
- ½ (4.5-ounce) can sliced mushrooms
- ¼ cup chopped onion
- 1 cup crushed potato chips (or French fried onions)
Instructions
- Cook the noodles: Bring a large pot of salted water to a boil. Add egg noodles and cook until tender but firm, 7–9 minutes. Drain well.
- Preheat the oven: Heat oven to 425°F (220°C) and lightly grease a 9×13-inch baking dish.
- Mix the filling: In a large bowl, combine noodles, mushroom soup, 1 cup cheese, tuna, peas, mushrooms, and onion until well blended.
- Assemble the casserole: Spread the mixture evenly in the prepared baking dish. Top with crushed potato chips and the remaining cup of cheese.
- Bake: Place in the oven and bake for 15–20 minutes, or until the top is golden and the cheese is bubbling.
- Serve: Let cool for a few minutes before serving warm.
Notes
Swap potato chips for bread crumbs or French fried onions for a different topping. To make ahead, assemble the casserole, cover, and refrigerate overnight before baking. For a lighter version, try whole wheat noodles and reduced-fat cheese.
