These Zucchini Pizza Bites are a low-carb, cheesy, and bite-sized version of your favorite comfort food. Made with ¼-inch thick zucchini slices topped with marinara, melty mozzarella, and mini pepperoni, they’re a quick and healthy snack, party appetizer, or kid-approved lunch that’s ready in under 25 minutes.
Ingredients
- 2 large zucchini, sliced into ¼-inch thick rounds
- Nonstick cooking spray or olive oil
- Kosher salt and black pepper, to taste
- ¼ cup marinara sauce
- ½ cup shredded part-skim mozzarella cheese
- ¼ cup mini pepperoni pieces (optional)
- Italian seasoning, for garnish
Instructions
- Prep the zucchini: Slice zucchini into ¼-inch thick rounds. Lightly salt both sides and let sit for 10 minutes. Pat dry to remove excess moisture.
- Cook the zucchini base: Preheat oven broiler or grill pan to medium-high. Lightly spray zucchini with cooking spray, season with salt and pepper, then broil or grill 2 minutes per side.
- Assemble the bites: Arrange pre-cooked zucchini rounds on a lined baking sheet. Top each with a small amount of marinara, cheese, and mini pepperoni.
- Final broil: Broil the assembled bites for 1–3 minutes until cheese is melted and bubbly. Remove and sprinkle with Italian seasoning.

Notes
To keep the zucchini crisp, salt and dry thoroughly before cooking. For a vegetarian version, skip the pepperoni. Try variations like mushrooms, olives, or vegan cheese. Air fryer and muffin tin versions also work great!
